Salmon nicoise salad

Try this quick and easy salad that’s full of flavour and plenty of ingredients to keep eyes healthy.

Ingredients

1 bunch of broccolini (blanched)

1 yellow pepper

4 baby chat potatoes (boiled)

1 avocado

1 red onion

2 soft-boiled free-range eggs

1 tin of pink salmon

1 lemon

Extra virgin olive oil

Sea salt and fresh ground pepper to season

Method

  1. Prepare and cut all raw & cooked vegetables into even pieces.
  2. Assemble all ingredients into a mixing bowl and lightly season with sea salt & fresh ground pepper.
  3. Add tin of salmon on top.
  4. Squeeze juice of 1 lemon over vegetables and salmon, and add a liberal amount of olive oil.
  5. Toss gently and add sliced egg before serving.
